My favorite foods in cupcake form: quinoa (the mother grain), avacados (so darn good), figs (fiber, yayh!), and almonds (i live off almonds). I have had ants in my pants to try this one out! and i’m pretty sure I’ll have to double the recipe, cause I’m gonna eat a WHOLE YUMMY batch all by myself. This pamcake is friggin DELISH!
(Using black or red quinoa makes it very pretty.)
She hardly eats them, but she sure will drink her veggies!. In fact, she usually grabs mine and finishes it off as well.
My Green Monster Recipe:
handful of kale leaves (ribs removed), handful of green grapes, half an avacado, 1/2 cup of filtered water or pure apple juice, small wedge of cabbage, 1 apple or pear, handful of ice cubes….all organic please..throw in blender and blend away…tastes like and has the consistency of applesauce. So Good for you and loaded with veggies. Kale is the king of veggies: it has 10-15 glucosinolates to fight cancer. Just one cup has most of your vit. C requirements, tons of vit. A, and a bunch of other nutrients. and its fun to say….K.A.L.E….KALE!…its kind of cool…i may name my next child, Kale.

My mum and dad are very special people- very smart, funny, a tad crazy, and full of advice that i didn’t take but should have. I get my stubbornpitbullness from my mum and my dry sense of humor from my dad. When I was in high school, I had a pretty early curfew, which I never followed…and for prom one year, my curfew was way earlier than everyone else’s – totally unfair and uncool. But my parents said that everyone could come over to our house, so all 10-12 of us laid out in the flour of our formal living room and it was super fun…when we woke up, my mum and dad had made this MASSIVE breakfast for us….so totally cool and AWESOME. Cinnamon buns make me think of that morning, and all the other family moments that really count…warm, sweet and filled with love. Bring on the nostalgia, baby.

This week we are being a little SILLY in the PAMCAKES kitchen. I am reading “The Happiness Project” by Gretchen Rubin, and in chapter 4, she talks about lightening up and taking time to BE SILLY. Lucky me, I got a “silly” moment on camera.

Who doesn’t love Paul Newman? This week’s cupcake is the Paul Newman, because the flavors are dreamy, just like his fabulous bare chest:
Cupcakes soaked with Proscecco syrup, blueberry cream filling, lemon buttercream frosting, topped with a drunk blueberry.
And yes, that hot lil mamma next to him is ME. just kidding.

In keeping with the whole summertime theme, this week’s flavor is S’MORES. mmm mmm long days at the pool, movies, family pizza night, water balloon fights, kool-aide, jell-o, watermelon, campfires.
The Perfect Summertime Cupcake: lemon cake with a rasberry filling, lemon buttercream, topped with lemon zest, sugar crystals, and a rasberry rolled in sugar.
I decided that this little pamcake is just about as perfect as my little miss Ray of sunshine. All sweet and pretty on the outside, a little sweet attitude waiting for you on the inside, and of course, smothered in sugar sprinkles, which apparently are a very important food group. As she would say, “well…actually its FABULOUS!”
